Mag Kirwan of Goatsbridge Trout on expanding her product range, and keeping an eye on sustainability

The farm run by Kirwan and her husband Ger in Kilkenny dates back to the 1960s, and is now the last freshwater aquaculture operation in the Republic of Ireland

Seafood is still found infrequently on Irish dinner plates and when it is, it’s often the usual suspects: salmon or cod, and perhaps a bit of crab if we’re feeling adventurous. For Mag Kirwan, one half of the husband-and-wife team behind Kilkenny’s Goatsbridge Trout, the job of changing that is still ongoing.
