Ingredients, serves four to five

1 whole chicken, about 1.2-1.5kg

Olive oil

100g house rub (see below)

1 can of beer: a citrus beer works well here

For the herb brush

1 bunch thyme

Butcher string

1 wooden spoon

For the sticky glaze

200g apricot jam

100g honey

Pinch of house rub

For the BBQ baked beans

30ml olive oil
