Open ravioli of beetroot pasta with orange chilli prawns, sambuca cream sauce
I use the beetroot from my vegetable garden, so you’ll be surprised as to how the colour of the purée changes from batch to batch. This year’s beetroots are really vibrant, or at least what I have left of them since the sheep got into the garden and enjoyed a real feast. Ah well, at least the lamb will be well flavoured!
