A stint in the kitchen at Noma, the Copenhagen restaurant voted the best in the world, provided the inspiration for Galway’s newest eatery.

Aniar, which opened on Dominick Street last week, bills itself as a terroir-based restaurant, and aims to use as much local and seasonal produce as possible.
