It’s that time of year when the Jerusalem artichokes start to come into their own.

These knobbly tubers are planted early in the year, usually in February, and they grow like mad, throwing up great big stems that can reach eight feet in height.

The leaves and the stems look like sunflowers, and this is no coincidence because they are close relations.
