Spice up your life with a simple aubergine curry

This dish is ideal for a supper meal, as it’s quick to cook if you have a well stocked spice cupboard.

Although it uses a lot of oil, the addition of the lime juice, ginger, yoghurt and coriander means it still tastes fresh and reasonably light.

I like to eat this with some naan bread and a bottle of Tiger beer.
