Traditional tart makes best use of tapenade

This is a traditional Nicoise tart which uses some of the same ingredients as a salade Nicoise. If you can, use the small, wrinkled black olives - they are very salty and very authentic. If you can’t get them, Kalamata olives are a good alternative.
