Simple twist of skate
Skate and ray are very closely related to each other, but for some reason, they are both almost always called ray in Ireland. Maybe it’s because ray, when it was cheap, was so popular in fish and chip shops.
Whatever the reason, these fish are both very fleshy, even meaty. And of course, they are great for people - and there are a lot of them - who have a real phobia about bones in their fish.
