One of the essential ingredients that is used in almost every recipe is salt. For many years table salt - the fine ground iodised kind - was the only option, but in recent times salt has become a gourmet choice.
A staple commodity, salt is used for preserving foods, and has always had a profound political impact as a result. In ancient Greece, it was traded for slaves. Taxes on salt were instrumental in the French Revolution, the toppling of the Chinese imperial government in the early 20th century and in Mahatma Gandhi’s resistance to British rule in India.
