The gentle aroma of cakes cooking, along with the whiffs of vanilla, sugar and lemon, are probably among the earliest smells children of my generation and beyond experienced, as so many Irish mammies excelled at the art of baking. On special days, such as pancake Tuesday, we watched them turn creamy liquid into golden coloured pancakes and happily crunched on sugar, fresh spikes of lemon juice and crispy pancakes.
