A Cork-based restaurant chain is hoping to create 400 new jobs over the next two years with an ambitious expansion programme in Ireland and Britain, writes *Dick O'Brien.*

Hillbilly's Famous Fried Chicken opened a new restaurant in Derry last month, which will employ more than 15 people. The company has invested stg£250,000 (€297,000) in the new premises.
