Way out west in Connemara, Kay McEvilly of the Cashel House Hotel knows a thing or two about weeds. ‘‘When we first bought the place with the idea of opening it as a hotel, the 200-year-old gardens had deteriorated into 15 acres of brambles, nettles and every weed you can think of,” she said.
