Originally a mathematician, Nora Khaldi moved into food science several years ago with an eye on finding better ways of identifying proteins. Khaldi's business uses mathematical models to reduce costs in identifying useful elements for food companies. Industry leaders currently spend billions on a process that is laborious and with little guarantee of success. Nuritas has developed a model to radically cut these costs by making it easier to identify and test proteins.
