Smoked fish macaroni cheese; serves 4

Ingredients 500ml milk 300g undyed smoked haddock fillets 300g macaroni or penne 50g butter (plus some extra for greasing the dish) 25g plain flour 1 tablespoon wholegrain mustard 200ml cream 125g cheddar cheese (grated) 4 tablespoons parmesan (freshly grated) Handful of roughly chopped parsley 125g breadcrumbs 1 tablespoon olive oil Salt and pepper
