Freshly refurbished by its new South African owners, Ashford Castle in Co Mayo is once again one of the jewels in the west of Ireland's crown, writes Margaret O'Brien.

Ashford Castle has turned a corner. The trauma of being debt-ridden and the ignominy of falling into receivership are fast fading, consigned to an unloved chapter in the castle's long history.

Today, staff walk tall in their new uniforms, from the top-hatted, tailed and braided concierge at the front gate to the equally debonair doormen and the starch-uniformed waiters.
