Michael Kelly of Ariosa Coffee Company developed his interest in coffee over a five-year period working in cafes in New York and Sydney.

He learned about roasting and blending from the Italian head roaster at the speciality company supplying the cafe where he worked in Australia.

In 2003, he bought a coffee roaster in Rome and returned home to Ashbourne, Co Meath, to begin roasting his own beans under the brand name Ariosa.
