David Ellis has been involved in the hospitality sector for almost 30 years, and has owned several restaurants in Dublin.

His latest, Purple Ocean in Dun Laoghaire, is the realisation of an unusual dream. The Dubliner trained as a hotel manager in 1976 and managed hotels before setting up his own management consultancy company specialising in the restaurant sector.
