Apple season is just about to begin, and so too does our long list of apple recipes to try. Each year, I plan on making so many different preserves, freezing the apple purée for tarts and crumbles and making apple butter for scones or bread.

The natural pairing of apples with the blackberries that will soon be weighing down the hedgerow is hard to beat. But these methods of preservation are rarely long-lasting...
