On my first trip to Switzerland, my sister-in-law introduced me to the wonderful food that is the rösti. A cake of grated potato fried in a pan until crispy and melting, it's the ultimate comfort food and considered by some to be the national dish of Switzerland.

It was traditionally served as a filling breakfast to fuel the farmers of Bern, but is now widely served in restaurants all over the country.
