This Mexican-inspired salad is bursting with protein thanks to the beans and quinoa, and the sweetness of corn balances the fiery harissa paste.

Packed with protein: spicy quinoa and bean salad.

Quinoa makes a regular appearance in my kitchen, as I've learned to use this wonder seed in many ways. I mix quinoa flakes with oats for a high protein porridge, or use it in place of rice and couscous when cooking dinner.

My favourite way to eat quinoa is in salads. By adding some seasoning to the cooking water, the quinoa becomes flavoured. Saffron, turmeric, garam masala or, in this case, harissa paste all result...
