Many meals are made complete by the addition of a fried egg. Having grown up in a household that had hens scratching around in the garden I've always taken quality eggs for granted. Rich ochre yolks and nut-brown speckled shells were only some of the beautiful qualities of these eggs.

The hens were not just free range - they took over, especially during the summer months when doors were left open and a warm breeze...
