I rarely eat meat, so when I do I like it to be special – a slow cooked stew using beef shin that melts into a rich ginger and soy sauce, or a pork chop that’s been stuffed with a bramley and thyme crumb and seasoned to perfection. This spicy buttermilk fried chicken recipe is one such dish.
