I don't usually eat duck and regard it as being a real treat whenever I do.

I don’t usually eat duck and regard it as being a real treat whenever I do. They are delicious birds with rich dark meat and a notoriously generous amount of fat, but unlike a plump chicken, even a plump duck will not feed a large family unless you use it wisely.

I’m lucky that at my local farmers’ market there are a handful of stalls selling their own locally-reared duck – one stallholder...
