Rainbow trout is one of my favourite fish to eat. It's closely related to salmon and is sometimes referred to as salmon trout, although the flesh is more tender and more delicately flavoured than that of its namesake.
The fish is a rich source of omega 3 fatty acids and a great source of protein. When farmed, it is one of the most sustainable fish available.
