As a chef, from breakfast to supper-time, I’m always on the hunt for an inspirational food combination, a new ingredient or sometimes just a trip down memory lane for an old-fashioned forgotten gem of a recipe.

A few weeks ago, I made a trip to Ottolenghi’s Deli on Motcomb Street in London for a little spell of food foraging. From cinnamon sugared brioche to a lighter-than-air flourless chocolate tart, to a savoury aubergine...
