Sautéed onions and garlic simmering with a starchy rice or grain creates a comforting, soothing risotto. However, this simple white dish can sometimes be too sweet, so it can handle some strong additional flavours.

I love adding to the dish meaty fried mushrooms or paprika-spiked chorizo. Nutty parmesan is usually my cheese of choice, but in this risotto recipe I've used a blue cheese and one of my favourite grains: barley.
