Warm summer nights are perfect for big bowls of salad for supper and this week's recipe comes at just the right time. Panzanella is a Tuscan salad, a delicious mixture of ripe plump tomatoes and bread. It's lovely on its own or as a light supper, and is perfect alongside a roast chicken for Sunday lunch.

I made this recently and served it with freshly fried mackerel and garlic aioli for a relaxed Monday night...
