Head chef has his finger in every pie on the market

At just 27,Wexford-based chef Phelim Byrne has gained an impressive list of accolades.

A graduate of Waterford IT’s professional cookery programme, Byrne received his initial training at Kelly’s Hotel in Rosslare. He graduated in 2001 after winning an international gold medal the previous year and a scholarship to study in Rhode Island. That autumn, he was on the winning team at the New York Food Show.
