Five minutes after arriving to meet Gennaro Contaldo at Jamie's Italian in Dundrum, I'm beginning to realise that this isn't going to be an ordinary interview. "No sitting down," he says. "We need to get into the kitchen."

He soon has me ricing potatoes while he whips up two different sauces to go with our lunch. In five minutes flat, he's prepared two fresh potato gnocchi dishes - one with smoked mozzarella, tomatoes, chilli, garlic...
