Restaurateurs Jeni Glasgow and Reuven Diaz first met baker Craig Thompson in New York City 15 years ago, and the long-time friends are still collaborating creatively today at Glasgow and Diaz's Brown Hound Bakery in Drogheda, Co Louth.

The bakery predominantly features Thompson's repertoire of American-style baked goods - think apple monkey bread, Boston cream pie, buttermilk biscuits and savoury scones.
