It seems that when it comes to new culinary ventures, it's all about the meat these days. Joe Macken's Bear on South William Street gets the seal of approval from Ross Golden-Bannon this week (see overleaf), and later this month Oliver Dunne of Bon Appetit in Malahide will begin serving a new 'Bovine' menu.
