This week, Stephen Farrell from Strollers Bistro in Teach de Broc in Ballybunion, Co Kerry (ballybuniongolf.com), combines scallops with bacon for his take on surf and turf.

This is the Ballybunion version of surf and turf - all the elements in this dish work really well together, and it makes the most of the great local produce we have in north Kerry. This is one of our most requested dishes.
