Each week, a chef shares a favourite recipe. This week, Liz Nolan, whose new book, My Goodness, includes a selection of nutritious vegetarian recipes, offers her take on muffins.

Banana, oat and pecan muffins.

These muffins are just the thing for a mid-morning snack or for your child's lunchbox, and are made with spelt flour, an ancient form of wheat which contains more protein and less gluten.

They keep well for a few days stored in an airtight container, and can be frozen.

100g pecans, roughly chopped
