Chef's Table

Each week, a chef shares a favourite recipe. This week, Sean Buckley from Hotel Meyrick on Eyre Square in Galway has a comforting dish that uses Silver Hill duck from Monaghan.

When I was choosing our winter specials, I wanted to focus on warm and nourishing dishes that make the most of some of our customers' favourite ingredients.

On a personal level, I also wanted to choose dishes that reminded me of winter as a child, something with that warm feeling you get after a really enjoyable meal.
