Each week, a chef shares a favourite recipe. This week, Stephen Gibson from Pichet in Dublin, has an autumnal tart that makes a stylish starter for a dinner party.

Onion tart fine with walnut purée, Crozier Blue cheese, rocket salad and balsamic onions.

I always associate autumn with nutty flavours, and the seasonal walnut works really well in this dish, with the onions adding that near winter feel.
