Each week, a chef shares a favourite recipe. This week David Banning, head chef at the newly-opened Dela restaurant in Galway, has a tasty chicken dish served with Lyonnaise potatoes.

hicken supreme with Lyonnaise potato, and a cider, wholegrain mustard and lardon cream sauce.

The tenderness of the corn-fed chicken I use in this dish perfectly complements the creamy texture of the rich sauce. There's a subtle kick from the wholegrain mustard, and the new potatoes add a real summer taste to the dish.
