Each week a chef shares a favourite recipe. This week, John Doran from Rathwood restaurant and cafe on the Carlow/Wicklow border has a simple fish dish that makes good use of local cheese.

Roasted roulade of cod and smoked salmon with St Kevin's Brie sauce.

This is a simple fish dish with lots of flavour. I use Irish smoked salmon and fresh cod from suppliers in the south-east, while the cheese used for the creamy sauce is the Wicklow-made St Kevin's Brie.

I like to serve this dish with seasonal vegetables, boiled potatoes and a glass of a crisp, fruity white wine.
