Chef's Table

Each week a chef shares a favourite recipe. This week, Duncan Blair from Blair's Inn near Blarney in Co Cork (blairsinn.ie), uses local mushrooms and kale with hake fillets.

My favourite recipes are the ones where I can combine the best of local ingredients to produce a tasty dish that I'm proud to serve up in our pub, and this is certainly one of those recipes.

The fish comes from the fabulous Good Fish Company of Carrigaline and the kale comes from the hardworking Martin family's Waterfall Farms just outside Ballincollig.
