Each week, a chef shares a favourite recipe. This week Kevin Cleary, head chef at the Connemara Coast Hotel in Galway (connemaracoast hotel.ie) offers a different take on cranberry sauce.
This is a delightful spin on a Christmas favourite. The cranberries are cooked in port and spiced with cinnamon, nutmeg, crystallised ginger and other spices.
The sauce comes out beautifully - sweet but not too sweet, steeped in the flavour of a good port and enlivened with rich spices.
