Grilled black sole with lemon, caper and parsley.

Black sole, or Dover sole as it is more commonly known, is an extremely tasty fish that is a wonderful treat, especially when served simply with ingredients that let its flavour shine through.

If you can't get it, or if you need a more economical alternative, try substituting plaice, slip sole or lemon sole.
