Each week, a chef shares a favourite recipe. This week, Alan Foley from the Step House Hotel in Borris, Co Carlow (stephousehotel.ie) - the Bord Bia Just Ask restaurant of the month for April - suggests a sophisticated vegetarian starter.

This dish is a beautiful start to a meal. Warm and creamy goat's cheese is cut with the sweet and sour flavour of the caramelised chicory, and complemented with the pears, walnuts and beetroots.
