A new guide is set to raise the profile of Ireland’s cheesemakers, writes Gillian Nelis

As wholesale milk prices fell over the past decade, many farmers began to look for ways to diversify and generate extra income for their business. Among them was David Tiernan, who started producing cheese on his family farm in Dunleer, Co Louth, in 2004.
