The folks down at Castlefarm near Athy are getting ready to launch their new cheese.

Having started the process in early July with 400 litres of milk and the help of Elisabeth Bradley’s cheese-making rooms in Carlow, they are now maturing 50kg of what they think might be Kildare’s first farmhouse cheeses.
