These gorgeous-looking mango, rum and lime syllabubs feature in Sunshine on a Plate, the debut cookbook from Shelina Permalloo, winner of the BBC's MasterChef series last year. The dishes she cooked during the competition acknowledged her Mauritian roots - though she grew up in Southampton in England, both of her parents are Mauritian - and the book is no different, with recipes that transport you to that exotic island.
