Waterford's Winterval starts with a bang

The Bishop's Palace in Waterford, beautifully restored and now a museum, was the setting for a dinner held last week to launch Winterval, the city's new Christmas festival.

The fact that the menu was devised and cooked by Richard Corrigan should give some indication of how seriously the organisers are taking the food element of the festival, which runs until December 23.
