Tipperary catering company BBQ Joe's is bringing the taste of Texas to Ireland. Former hotel manager Brendan O'Connor found inspiration in the barbecue cultures of the US and Australia, and sought to replicate the kind of laid-back, hearty grilled cuisine that Ireland was lacking.

"Ireland didn't have that kind of barbecue culture," says O'Connor. "We tend to burn our food."
