80 years of success for sausage firm

Nigel Hick is the third generation of his family to go into the butcher business.

His butcher’s shop, Hick’s of Dun Laoghaire, is still a family run operation, and has become almost synonymous with its specialty: handmade, preservative-free varieties of pork sausage.

Hick, now aged 38, started in the business as a trainee at 18,working with his father and grandfather. His grandfather, Charles Henry Hick, opened the shop in 1927. The family will celebrate its 80th year in business next year.
