Champagne Veuve Cliquot-Ponsardin has a name for innovation. This legacy was begun by Barbe-Nicole Ponsardin, Francois Clicquot's 27-year-old widow (veuve) who gave the Champagne its name. One of her most important innovations as head of the champagne house was perfecting the riddling process (cleaning the Champagne of deposits so it is clear and glossy).
