In France, Spain, Germany and Italy - where they all have regional sparkling wine - Champagne is only bought when a Rolls-Royce sparkler is required. Crémant d'Alsace, Crémant de Bourgogne, prosecco, Seckt, Asti and cava all sell well. In Ireland we have now embraced this concept, with prosecco, cava and New World wines, but when it comes to alternative French sparklers, we baulk.
