For me, rosé wine encapsulates all that is endearing about summer. It contains the best of the fruits grown during this season.

Think of fresh, juicy Irish strawberries, ripe, fuzzy peaches and succulent, glossy nectarines. There’s also the fresh, clean acidity which acts like a crisp, cool evening breeze. As the sun elbows its way through the clouds, signalling longer days and al fresco dining, the current surge in rosé wine sales is not...
